What’s the most delicious thing you’ve ever eaten?

As a Bengali from India, my love for food has always been strong. I’ve had the pleasure of devouring countless delicious dishes, both vegetarian and non-vegetarian. It’s impossible for me to single out just one because there are so many that have tantalized my taste buds over the years.

Let’s start with the comforting home-cooked meals prepared by my mother. Nothing compares to the love and flavor she puts into her dishes. Then there are the street foods that add a thrilling spice to life. The sheer variety of noodles from around the world has also delighted me, though I must admit I haven’t tried them all. I’ve even had the experience of tasting bland, boiled dishes that failed to impress me, regardless of being prepared by well-decorated chefs at various food festivals.

One type of cuisine that has always been a time-saving favorite of mine is Mughlai. Dishes like Mughlai biryani have never disappointed when I’ve needed a quick and satisfying meal. However, if there’s one dish I would like to highlight, it’s a childhood favorite prepared by my mother, as well as many Bengali mothers: “sorse bhapa illish.” This dish features steamed Hilsa fish in a delectable mustard sauce—a true classic that never fails to please.
